Who doesn’t love a classic creamy GUAC? Seriously?
Here’s my quick and easy version.. and yes, this is a meal!! For anyone who may think I eat a handful of spinach and grass every day, not the case! 😜😂😆 here’s THE PROOF.
3-4 RIPE Avocados
1 cup chopped cilantro
Juice of 2-3 limes
1/4 cup diced red onion
handful of chopped cherry tomatoes
Raw corn kernels (slice off one ear of corn)
Optional additions: Red bell pepper, hemp seeds, chilli flakes or spice of your choice!
Simply combine all ingredients, except avocados. Mash ripe avocados in a separate bowl and then mix everything together. Add more lime juice if necessary. I prefer to keep all my recipes salt free, but feel free to add this if you must.
Eat with anything you like! I enjoy it spread on romaine lettuce leaves, with carrot sticks or cucumber slices, or even with a spoon.
